Characteristics: In dried form, Dried Sea Cucumber from East Japan is round in shape and firm to the touch, with 6 rows of dense spikes around the body (6 being the highest quality). They expand maximum can be about 12-13 times its original volume after soaking in water during preparation.
On the Palate: Meaty, mildly sweet, and crisp to the bite.
