Characteristics: From the waters near Amman and Abu Dhabi, Dried Abalone from the Middle East are meaty, darker in color, and requires a longer soaker and cooking time. Once sufficiently prepared, they have a rich, umami flavor reminiscent of the sea.
*To retain its original and delicate flavor, do not add scallion, ginger or wine when reconstituting the dried abalone.
